Your Workshop Journey

Mix the dough

Mix the dough

Matcha, sweet rice flour and sugar, whisked smooth before it goes anywhere near heat.

Steam it

Steam it

A few minutes of heat turns the batter into mochi dough, stretchy and far too hot to touch.

Dust and roll

Dust and roll

Starch stops it sticking to everything. Roll it out while it is still warm.

Fill and shape

Fill and shape

Cut, fill and pinch each one closed. Yours will not look like anyone else's.
